Olive Oil?


Do you know what the Burrowing Owl and olive harvest season have in common? We all know olive oil and vinegar are healthy, but do you know why? Do you know how to tell what is and where to get the good stuff?

Carol and Ralph Campbell, owners of ABQ Oil Company, have the answers to ALL of these questions —olive oil, harvest season, Burrowing Owls, vinegars (white, balsamic etc.), cooking secrets, environmental issues and probably a lot more.



The Campbells, life long New Mexicans, were on the hunt for a fulfilling “retirement” plan, after Carol’s many years of working for the Airforce regulating and complying with state wildlife issues. While Carol was in charge, she also did research on the disappearing Burrowing Owl for 25+ years. (Link?). She’s probably curious as to what those owls are up to now. Ralph, an avid “chopped cook”, was always on the search for quality cooking supplies...oils, vinegars, etc. Boom! They agreed that luxurious infused olive oils and vinegars was a great idea. No one was doing it in Albuquerque and there was a real need for it. With her research, analytical background and his love of experimental cooking, the plan was in motion.

After they recovered from the initial dissapointment that olives cannot be grown in New Mexico, they continued to check out several reputable olive oil distributors around the world before finding the perfect fit. Their final choice was made, because the distributor they chose is highly regulated and very meticulous about what and when the “crush” happens - not to mention, woman owned company.



The olives MUST be picked just as they ripen. If picked after they have ripened, they are already degraded. Timing is everything. Spring. Fall. Once picked at the right moment, they MUST be crushed within 8-10 hours. Cold press crushed. A sample is then sent to be tested for percentages of health benefits and quality multiple times. Once the chemistry is perfect, it is shipped to the states and the Albuquerque stores from Portugal, Spain, California...It’s a strict and tedious process.

The color of the oils, like we’ve always been told, has nothing to do with the quality of an oil. Think about it, there are many types of olives, are they all the same color? Smells are masked and deodorized also, because your average grocery store olive oils are spoiled, degraded or just plain rancid.

By the way, you CAN cook with a good olive oil!

AND the vinagers. Where do I start. Mother of Vinager (a natural carbohydrate which is the fiber in foods like celery and lettuce) is produced by the harmless vinager bacteria. Wine vinegar? Champagne vinegar? White or dark? No added sugars. For all the vinegar flavors they carry.
